This cake pan comes in several sizes and I got the 9 inch by 3 inch pan. This two-piece pan is made of anodized aluminum with a rust-proof matte finish. The ""top"" and ""bottom"" indicators are etched in the metal so can’t be washed off. The stainless steel release latch for the buckle on the side expands the upper ring so that it can be lifted off the base.
The base of the pan has a drip tray, and the center is raised up about ½” with a molded gasket ring around the top. The instructions are found on the back of the label and note specifically that this pan is not designed for thin batters, so if you have batter than runs like liquid, it will leak in this pan without a solid base layer. The pan can be lined with parchment paper or greased and floured to help with cake release, though this is optional. I appreciate that the sticker on the pan could be removed without leaving any residue. You’ll notice that there’s a tiny gap at the bottom so any batter thinner than pancake batter will run through. The bottom outer edge of the ring is rolled and has a smooth surface that’s safe to touch. The height of the ring is about 3.5” inches, but since the middle of the base is raised, the maximum interior height of the pan is 3 inches. Note that this pan should always be handwashed without abrasives or harsh chemicals, as placing in the dishwasher or using scrubbing pads can damage or discolor the aluminum.
I made a chiffon cake in this pan using parchment paper to line the bottom but did not grease the sides so that they would stick to the pan and hold its shape. The batter had plenty of structure and stiffness so that it did not run or leak through the seal at all. going to have a lot of structure and be thick enough to not run. I’ll be lining just the bottom of the pan with cut to size parchment paper. The finished cake which rose quite a bit, but when I turned it upside down for cooling, the parchment at the bottom allowed the cake to slip and pull away from the pan resulting in a pucker, so next time I would skip that step. Other than that the cake turned out great. I ended up cutting the cake in half and layered it back in the pan with ice cream to make an ice cream cake. The pan was the perfect height for this and after re-freezing the upper portion of the pan still released very easily when I opened the latch.
Overall, this cake pan performed exactly the way I was hoping and allowed me to bake a fairly tall cake and use it as a mold for ice cream cake. The latch is easy to use and everything released beautifully with minimal sticking. The pan is easy to clean, durable, and is well-made.
